Various pigs carefully selected by Sakaeya Shinbo.Pork is delivered daily and dehydrated and conditioned in a maturing cellar until the day comes, and the best pork of the day is deep-fried in lard.The pork cutlets are deep-fried in two batches and topped with homemade sauce, and the rice used to bring out the flavor is Ryunohimiko rice from Gifu Prefecture.This is cooked in a Vermicular oven.
